    Drizzly day = good time to cook

    Got a bacon wrapped axis hind quarter going on the smoker. First time trying it this way so we’ll see how it turns out.

    Seasoned up, injected with roasted garlic and herb, planning to smoke to around 140

      Just pulled it at 140 internal. Going to let it rest a bit and then start carving




      Tossed a tri-tip on there also and cranking the heat up for that.

            Yeah drizzled all day. Turned out awesome. Cut with a fork tender and really moist. Definitely doing this again

                    Took around 3 hours. Smoker was at 230-240. Put the probe close to the bone in the ham, pulled at 140 and let rest for a bit. I think injecting it really helped
