Start off with however much back strap you want. It's better if its tenderized before. All you do is wrap it in bacon then season with salt grass steak seasoning and if you can find it a bottle of Tony chacheres wild game marinade. The longer you marinade the better it gets.

Some cheap bacon. The thin does better than thick
Salt grass steak seasoning
1 bottle of tony chacheres wild game marinade
