Pork-upine would be better than tomato in a gumbo.

I love okra in a chicken & sausage gumbo. I don't make it that way often bc my kids don't like it so i'll usually put me some gumbo in a small pot on the side and ad some okra to it. Around Ville Platte, La the old timers didn't use roux in their gumbo. File and okra were the 2 thickening agents.

No Okra, No Tomatoes, Roux darker than the dark chocolate.

                      I think you’re wrong.

                      Onward with the okra!

Lol. My gumbo has tomatoes and okra and taste awesome.... but I’m not from Louisiana so I can’t call it gumbo by some law. They get very defensive about the okra reguardless of the taste

They are scared of it.... like a vampire and garlic

To each their own. I like/prefer it!

I’ll just assume in Louisiana tomatoes in gumbo is like beans in chili here.

My wife, a full blown Cajun from South La, makes an okra chicken and sausage gumbo without roux, but she also makes the traditional prairie Cajun gumbo with dark roux and no okra (or tomatoes). It’s all good to me, even many of the non-traditional variations!

By the way, the wife is an old timer😲

No.. Beans go in chili. Tomatoes do NOT belong in gumbo. Okra is good though.
