        Great job, blackened red fish is amazing. Chef K Paul Prudome made it famous many years ago and red fish were over fished after that so limits had to be implemented.

          I remember that it became controversial for restaurants to have blackened redfish on the menu.

            Awesome recipe, I have fixed nearly the same. My favorite way is to grill it and just before it is done put a generous amount of pico on it and cover that with pepper jack cheese, leave it just long enough for the cheese to melt and the dig in.....man it is good.

                      Awesome! I cooked it again last Thursday, using the same sauce. Next time I'm going to make the Pontchartrain Sauce that Hopedale recommended (using Cajun Blake's recipe that I've made before! )
