I've processed many, but I learned a few more tricks I'll put to use. Appears I've been wasteful in the past. Also look like I won't need my machete.

Every time I've taken one to a processor, I've felt ripped off. Doing it yourself is much more satisfying and part of the experience.

Great post. I'm bookmarking this one for future reference.

Oh how I miss having a basement.
        Great job on this thread.

I have always found that processing a deer goes so much faster when you have 1 or 2 friends come over and help out

drink a few cold ones ( i drink tea ) and put on some Hank Jr.

after the meat is labelled and wrapped , I send my friends home with a few packages of meat

the favor is returned when i help them out at their house

Thanks Blake. Something I have been doing the last few years and has worked well with game, fish, and sausage is a Foodsaver. It vacuum seals and has worked really well.

Wow, a lot of good info. Us Mexicans are used to barbacoa, carnitas, and tamales. Kick A** as they may be, I need to try different steak cuts. Thanks for the info and awesome pics.
