                            Looking for ideas for potato substitution. I try to avoid them being diabetic. What about turnips? Or cauliflower florets or rice? Anyone tried that?

                                Yep. I’m on Keto and use turnips all the time. Especially in stews. I waste a good bit, but I’ll skin them and cut them into squares just like I would do a potato. I’ve fed stew to non-keto folks and they had no idea they weren’t potatoes. Texture is pretty much the same and they take on the flavor of the stew.
