Bacon

Made a little wild pig bacon. Test batch was pretty good even before smoking.
Used this recipe. Too sweet, not enough pepper.

Did a couple of hours in mesquite with a little hickory. Going to let it sit overnight in the fridge in a sealed ziplock to kind of even out, then eat some for breakfast

Curing and Smoking Bacon at Home
https://food52.com/blog/3538-curing-and-smoking-bacon-at-home
Karen Solomon shows us how to cure, smoke, and fry our way to perfect bacon at home.
This is the recipe we use for our meat pigs.
I’ve never tried it on wild hog but I just started baiting traps again this week
