Birria Style Elk Tacos -Best Tacos Ever?

    Dang Michael, that looks good!! Heck, I don't even have a Dutch oven for the stove... all mine have legs... I could see making a full blown stew like this and just using the seasoned/grilled tortillas to sop it with!! The combinations of ingredients just sounds good! ... well maybe back off on the garlic a bit...



    On and pretty good on the self video, editing/production too.

      I added a "loose" recipe to the description of the video

      Loose recipe:

      Birria De Elk:
      1 Elk Leg w/bone (or shanks) (cut into chunks to fit in pot)
      1-2 lbs. venison roast, cut into medium chunks (I didn't for the video, but I would add more meat for leftovers!)
      avocado oil (or other neutral oil)
      5 ancho chilies
      3-4 guajillo chilies
      2 chipotle chiles w/adobo
      2 quarts homemade venison bone stock (or rich beef broth)
      1/4 cup red wine vinegar (for deglazing pan)
      1 cinnamon stick
      6 bay leaves
      2 tablespoons pickling spice
      4-5 medium tomatoes
      1 yellow onion
      8 cloves garlic (or minced garlic)
      Salt to taste

      Brown the meat in avocado oil on all sides on med-high heat. DON'T SKIP THIS STEP!
      Remove meat and sweat onions til soft in same pan. Add garlic for last 30 seconds.
      Deglaze pan with red wine vinegar (or other vinegar)
      Add meat back to pot

      Consomme
      Remove stems and seeds from dried chiles. Cut into smaller pieces to fit into blender.
      Toast in pan until fragrant and then add to blender carafe.
      Add boiling stock to carafe to cover chiles. Cover and allow to rehydrate for 20 minutes.
      Add onion, tomatoes, herbs and spices and blend until smooth.
      Pour to cover meat in stock pot. Add additional stock if necessary.
      Add bay leaves, cinnamon stick, fresh thyme
      Simmer for 3-4 hours until meat is fall-off-the bone tender.

      Remove meat/bones from pot.
      ***NOTE*** I didn't in this video, but at this point I would recommend straining consomme to remove pulp and larger chunks of spices.

      Quesatacos:
      6 inch corn tortillas (a large pack will do)
      1lb Oaxaca cheese, shredded (or monterrey jack)
      Consomme (braising sauce)
      Shredded beef

      Consomme Serving:
      -Consomme
      -diced white onion
      -finely chopped fresh cilantro

            K, that makes sense now... I noticed the lid was recessed for coals... That a Camp Chef? I have a big ol 14 inch deep one that I do prime rib roasts in that has that dual purpose lid/skillet... my favorite piece of cast iron I have!

                  That’s the one, but this one is smaller. I prefer it over my Lodge of similar size.

                    This one is on my list as well. Michael's excitement about his version has me prioritizing this one.
