Im gonna say the must eats are:

Louie's Upstairs Sports Bar - some of the best mesquite grilled fajitas in Texas

Cap'n Roys - great blackened fish and shrimp and that fumi salad

Daddy's Cajun - the boiled shrimp and crawfish combo

You can walk in and wade fish behind the Convention Center. Soft plastics work best.

          To add to this:
          Yummies Bistro (for breakfast/brunch)

          Padre Island Brewing Co.

We enjoyed Pier 19 last year as well.

            Must eats:

Blackbeards - The Primo Burger rocks!

Dirt Al's - great fired seafood

Louies Backyard - Seafood & Prime Rib buffet

Fishing in the surf can be good. I've caught snook and trout on artificials casting in the guts parallel to the beach.

Sight casting in the bay is awesome. Also just blind casting the pot holes is productive as well. Gaining access is tough though.

Enjoy yourself. If you find yourself just west of my home town of Los Fresnos on Highway 100, there is an awesome taqueria. Taqueria el Cien (just east of FM 803 on 100) makes tacos that will make you want to sell your house and move to the Valley. Tacos de bistec are what you want. If you are feeling really frisky do molleja (sweat breads) or tripa. Get them with everything.
