    My grandfather used to save the juice from pickled beets and put the eggs in that. They were purple but were sure good.

      I just made 60 lbs of pickled beets last week . Got about 25 lbs to go .

        We have these really spicy pickles, and when they are gone we pickle eggs in the juice. They are great.

            I want to like those so bad but the rubbery texture of the whites gets me. Maybe I’m doing it wrong .

                          Ya'll been doing it wrong. Properly pickled eggs are fertile eggs that have been incubated for 14-16 days and then boiled and pickled. Adds to the texture and flavor. You get that juicy little squirt when the eyeballs pop.
