    Kroger had these boneless loins on sale for .99 cents lb. I cured for 8 days and finished smoking for 3.5 hours till an internal temp of 150 degrees. Has a great flavor.

            Fans of Canadian bacon will rejoice this recipe for making flavorful smoked pork loin at home. Making Canadian bacon or back bacon is more like curing a ham than making American bacon. Order boneless loin (not tenderloin) if you want to make this. Irish bacon is made like Canadian bacon but without the smoking step.

                    Everytime I find those big pork loins on sale I do this too. Ham sammiches for weeks!!!

                      I do the same but go with English Bacon. The loin but with the fat cap and the "side". They call them Rashers, I grew up on that.

                            I use this curing salt from Academy. Just follow the amazingrib.com website recipe and it wil turn out fine.
