i used to hunt in kilgore and we would hit the country tavern every friday night when we went out there, ribs were awesome i havent been back in about 7 or 8 years though.
Fried okra is delicious. A variety of sides is common now to appeas the masses. Back in the old days the central Texas joints didn't even offer beans. The emphasis was on the meat. I've read stories that they only offered white bread or crackers, pickles, onions and a slice of cheese or avocado. NO SAUCE at all.

Bodacious BBQ on Mobberly in Longview is right there with all the top places in the state that I have enjoyed.

Lots of good BBQ in Texas.

CT is hit and miss these days. I think it depends if you get yesterdays ribs heated up for fresh ones off the pit.

If I go, I will go late on a very busy night to make sure I get the good ones. Dont go early to beat the crowd because you will not have a good experience.

For light smoke but well moist and trimmed, I'll go to Andy's hog wild.
I prefer more smoke on my meat.
Brisket House is VERY good and so is Andy's

Our local Bodacious has gone downhill quick off I20 in Winona.

Rudy's BBQ is some of the best I have had. It is hard to beat for sure.

                          This is just crazy talk!

Pinto beans, mustard potato salad, fried okra...???

I expect these things when I go to a BBQ joint, as most probably do.
