    Ingredients
    • 2 dozen hard boiled eggs, peeled
    • 1 large onion, sliced
    • 6 jalapenos , sliced
    • 3 cloves garlic, minced
    • 3 bay leaf
    • 2 Tbsp. mixed picking spice
    • 3 tsp. red pepper flakes
    • 4 Tbsp. kosher salt
    • 4 cups white vinegar
    • 2 cups water

Combine vinegar, water, salt, and spices in a sauce pan and heat until salt is completely dissolved.

Layer eggs, onions, garlic and jalapenos in jar.
Pour hot vinegar carefully over eggs. (cover eggs completely, adding cold vinegar if necessary.)

Place lid on jar and allow to come to room temperature.

I made a batch a week or so ago. Loaded with jalapeño and seasoning. About to add another batch to original solution. Adding Louisiana hot sauce for a little extra kick.

Buy a gallon of whole pickled jalapenos and pour into gallon jar. Eat peppers until only 8 or 10 left, boil 2 dozen eggs(then peel), cut 1 large onion into chunks, 1 pack of little smokies, tablespoon of minced garlic and generous shot of Tabasco. Put all ingredients in gallon jar(juice saved) and refrigerate for 10 days. Turn jar(upend) every day and after the 10 days grab the cold beer and snack. Club crackers on the side are a plus. Save juice when empty and start again.

Just made a dozen with sausage. Will post a pick in about a week. It needs to meld some.
