                  I think I got everybody via PM today.

                  I forgot to add to the first of my email that to keep in mind the how-to is written in detail for folks just starting out. ...... so take the detail for what it’s worth when you read it depending on how well versed in brisket you are. I have a lot of folks who are just starting out ask for a how to so I put something together for them. They liked the pic results and wanted a step by step. As we know there are 100 ways to get it accomplished and everybody has their preferences, These are just mine. I'm no Aaron Franklin..

                  I don't go into great detail with specific rubs because I like kosher salt and black pepper mostly.. . I might top the S&P with a little garlic salt or even a light dusting of my favorite rub to change it up but 9.5 times out of 10 its kosher salt and coarse black pepper. Thanks Charlie for the extra work on my birthday. lol...

                      Well B'day boy, I hope you had a good un! I sliced one flat and chopped the point, then cut the other flat up into 3 big hunks and chopped that point too. All vacuum sealed and stored away for those quick weekend runs to the deer lease... Was gonna do some ribs today, but weather might not allow for that... Been just slicing the ribs up into 2 rib pieces and deep frying them lately... Ain't a bad way to do 'em and they're ready in 30 minutes!!

                        The most important thing about Smart's instructions for those of you who got 'em... in order to cook a brisket (or any other large piece of meat) is cook by temperature NOT time! Make sure you have good thermometers for cooking! Takes ALL the guessing out of it!
