When my Yankee in-laws are in town, they like me to make them rattlesnake chili. I parboil the meat, pick the meat from the bones, chop it fine, and use it in my regular chili recipe. It's pretty good, and they get to go back to New Hampshire and brag about eating rattlesnake in Texas. I guess they think that we eat it all the time down here.

My dad used to cook it in chili and it was actually really good.

Killed one on the lease a few months back. skinned it out and used some Bolners Fiesta chicken fajita seasoning on it. Cut it into 3" pieces pan fried in light oil and my 5 year old daughter and I inhaled it. My darling wife on the other hand wouldn't touch it.

Skin it. Hang it from a tree to dry out about four hours and eat it like jerky. Good and cures cancer too.
