I though grilled was pretty rough. Very chewy/rubbery

I've marinated and grilled 2 recently and they were good. The texture is a little chewy, but hey - it's a snake. There's a reason you don't see them in the butcher case at Albertson's.

as far as tough, I'd say not that bad. I thought it was a lot better than some we had at a restaurant at Grand Canyon.

When my son was young I had cooked one. Then he kept asking for me to cook another and I used chicken for many years (he was young). At some point I had to come clean and tell him what he remembered was chicken. So that was a good reprieve for me.

Do it like I do fish. Corn meal salt and pepper. Fry it.

When my Yankee in-laws are in town, they like me to make them rattlesnake chili. I parboil the meat, pick the meat from the bones, chop it fine, and use it in my regular chili recipe. It's pretty good, and they get to go back to New Hampshire and brag about eating rattlesnake in Texas. I guess they think that we eat it all the time down here.

Slit skin up the belly. Pull skin off pull guts out cut in chunks batter and fry.

I have a recipe, but I need to be really drunk to remember it and then drink a few more to know if it tastes right. So, I don't think I can help you while I am at work
