    Wagyu Brisket

    I know it's not the real stuff but man o man what a brisket. Seasoned with a little 2 Gringos Chupacabra Brisket magic then heavy on the S&P. Smoked it hot 300+ to and internal temp of 160 then did the Texas crutch and pulled it off at around 207F when it was probe tender. Juiciest most tender brisket I have ever experienced!!!

              It was on sale at HEB for $6 a pound ours was a small one and it was $65. I've been wanting to try one for a while and went for it!

                  Wrapping it in aluminum foil to help it get past the stall, a lot of times the brisket will hit 185 and stay there for hours, it also helps keep it moist.

                        At $6 it's for sure not full blooded Wagyu, probably mixed with Angus (it could be a very low % of Wagyu and still labelled as such). Still tasty beef though.

                              When I looked up the description of Wagyu it said a Wagyu sire with an American Black Angus cross.
