    Louisiana Blue Bag.

I then add a few more ingredients to make it more zesty, crunch and spicy.

          X2 on Andy's

For me it's Andy's, then Milk/Egg wash, then Panko Crumbs.

2 cups corn meal, 1 cup flour, garlic powder, onion powder, cayenne, salt, pepper. Dip in egg/milk wash, batter, fry! Better than anything you can buy!

My wife uses Louisiana shrimp fry and cuts it with cornmeal. Think it's 50/50 but not sure. Best catfish on the planet

Cornmeal (or masa for tamales), add salt and pepper

bathe fish in 2/3 spicy brown mustard, 1/3 hot sauce of any kind. fry at 375 degree.

Panko!! Best stuff I've ever eaten. But it is not seasoned so I add a good amount of Tony C's. Or you can add whatever.

                      Rinse fish
                      Coat in flour
                      Dip in egg/milk
                      Coat with Panko
                      Enjoy the crispy goodness

It's a lot of work and I dont do it for big groups, but 6 or less it is my go to.

I like my fried fish dusted with cajun seasoning and fried in a 505/50 mix of Uncle Gilbert's and Louisiana Fish fry.

This is great and what we do now! We used to be able to buy cracker meal. It is really good on shrimp. Not sure if they just dont sell it anymore or what, but crackers work great.

Saltine crackers and corn meal mixed 50/50 in a blender with seasoning mixed in to taste. Coat filets in Dijon Mustard then batter with the mix. Never had a complaint from anyone that’s tried it.
