    depends on the fish . Catfish I like cornmeal. Other fish I coat in mustard and use Louisiana yellow bag but add a little flour..

      One sleeve of original or low sodium saltine crackers in the blender. It’s simple, not overpowering, and provides a thin layer of crust.

        I do the same except just use straight cornmeal. I mix some hot sauce in yellow mustard, give it a light coat and roll in plain cornmeal.

        I had some a buddy cooked that was pretty dang good and he used plain masa.

            I have not researched, but was reading that Zararans, Louisiana Fish Fry & Mckormick seasoning sold out to China..... not sure but never the less I just use 3 parts corn meal to 1 part flour & season to taste ( salt, pepper, garlic )

              I soak it in buttermilk combined with egg, trappy’s jalepeno sauce, and some egg. I then coat it in a 3:1 cornmeal and sifted flour mix. Fry at 350ish

                DRENCH:

                1 large egg
                1/2 cup buttermilk- 1/2 cup beer
                Louisiana hot sauce to taste
                salt to taste
                DREDGE:

                1 cup corn flour
                1 cup cornmeal
                salt to taste
                ground cayenne pepper to taste

                          I'm probably in the minority but I'm not a cornmeal fan. I prefer finely crushed Ritz crackers. Especially for Trout/redfish.

                          Dredge in lightly seasoned AP flour, into the egg wash, and dredge in "Ritz flour".

                            Me to except for i use the Uncle Bucks Hot N Spicy batter. Its not hot or spicy to me it just has the right amount of spice added to make it flavorful. Great on alligator and fried squash as well.
