Pit Boss. Also do yourself a favor and buy the Amaze N Tube accessory. Not the same as firing up the stick smoker, but I love the ease of it all.

Which thermostat did you get? I think mine is having issues.

I'll throw in another vote for a Pit Boss. I have had mine a couple of years now and it's been real good. It sure is convenient and easy. I've cooked lots of good meals on mine.

It's actually thicker and heavier than the Pit Boss smoker and $100 less and very highly rated:

How hot can you get the Even Embers grill?

This one was recommended by pit boss forum. Went ahead and did warranty claim as well and got that one for backup too.

Another vote for pit boss. I’ve had one for 5 years now and the only issues I’ve had with it was my fault. I just purchased the 1150 pro from Lowes and it is far superior to my last one. It’s a little out of your $500 price range but I highly recommend it.

Checkout camp chef, I’ve got their small portable one that has done well. I think I paid $350 but it’s pretty small.

I bought a Pit Boss 820d about 5 years ago. It cooks great. I really like the sliding sear grate that allows you to crank up the heat to sear steaks.

                            I did modify mine though.
The temperature swung more than I was happy with, so I added a Savannah Stoker controller. Once tuned, the temp doesn’t swing 5*.
It also has some nifty features.
I also added a folding shelf and a rod attached to the sear plate to make opening/closing it easy.

Got a pit boss last Summer. You won’t regret it. Wish I had gotten one sooner. Like said above...the newer models now have wireless controls and sear plate rod and removable ash tray. Very easy and consistent.

The Even Embers grill gets up to 450F I believe.
