I remember seeing the Mexican hands that worked for my friend's dad starting a big fire before daylight and putting one wrapped in wet burlap on the coals and burying it when I was a kid (9-10) but was not around when it came out
I was told that the best meat for tamales was off the head of the pig
Cajun Blake said the best gator was the cheek meat
Stands to reason a cow head would have some good meat on it, you can keep the brains and eyeballs and such. Lingua is good though

My buddy loves to bury the head in a hole in the ground over mesquite coals to eat it in the morning, Some people can eat cheek meat every Sunday but get squeamish pulling a whole head out of the ground,the smell is stronger at first. Typically helps as a hangover cure. My highschool drinking buddy cooked heads in 55 gallon barrels his whole life, his family cooked 5 to 10 heads every Saturday night like clockwork. Sold out by 8am Sunday morning, Supplied the whole town to those who could wake up early and wait in line
