I have watched several of their videos. I was a meat mkt. manager/ meat cutter for 26 years during my 31 years in the grocery business. These guys really know what they are doing. I am also glad that I only had to process carcass beef a few times in my early career. I never used any knife except a Victorinox (Forschner) and if I remember correctly that is all these guys use and sell .

I had my oldest watch this video Friday night because he told me he wanted to help butcher the doe i shot. I let him practice on the shanks yesterday while i took care of everything else.

These guys put out some good content.

Watching them on YouTube is what led me to processing my own game three years ago. Won’t take another animal to a processor again. They have a ton of videos. Watched one last night on grass fed beef vs grain fed beef. It was pretty informative. And I could tell just by looking at the two side by side which one was what.
