    Marinated and then seared in cast iron, yes please!
    It's as good as any steak I've ever eaten, and way more tender.
    I do have a superstar cook for a girlfriend though

          IMO, Speckelbelly the best, canada second, snow third in taste. The later in the year, snow geese switch over to oats/grasses before they head back north and they don't taste as good as they were earlier in the season.
          Like anything else, soaking in milk will help.

                    Oh man. So many possibilities to joke here. I‘ll just be honest.

                    1. It’s Canada goose.
                    2. Both are trash.
                    3. Mix enough pork and fat, anything makes decent sausage.
