My mom grew up on a small dairy farm and her dad had an old black man that worked for him. She said almost everyday his lunch was beans and meat, which turned into a cold weather tradition for us. Pretty simple.
Ingredients:
1 large yellow onion, diced.
4-6 cloves garlic, diced.
1 tbl spn Fiesta Pinto Bean Seasoning
1-1.5 tea spn chili powder
2 beef bullion cubes
1 lb dry pinto beans
1 lb hamburger meat(I’m using ground moose currently)
Brown onion in 2 tbl spn vegetable oil
Add garlic, don’t overcook.
Add beans, cover with 1” of water.
Add dry ingredients and bullion.
Boil 30 minutes and then simmer until almost done.
Brown hamburger and add to beans, low boil for 30 minutes or until beans are done.
Serve with rice/cornbread
