That may be true, but the Nilgai meat I’ve had before was very dark like an elk, and tasted about the same. It’s possible that was from a cow though and this was from a rutting bull or something.

Agreed here. Fawns have heads that look like calves and are generally 50-70 lbs. Yearlings, even does, will look like an actual deer even though they will be skinny, and pushing 100 lbs minimum.
