You shouldn’t need to freeze them, like was said above, just dry with a paper towel before sealing. As long as you don’t try to seal them while they’re super wet you’ll be fine

Great breakdown. When I worked for deer processor we dealt with this too. 55 lbs of a quartered deer does not equal 55 lbs of final product. Especially if you bring the meat in dirty.

Definitely go with a table top rotary. The clamp on vises are cool until they don’t fit the table you happen to be tying at. I believe dyna king is fairly affordable.
