Beef dino ribs on the smoker. First attempt turned out pretty good!

Those are my favorite things to smoke. So delicious and harder to screw up than a brisket.

Not to encouraging when I have messed up every brisket to some capacity.

225 - 250 unwrapped for 3 hours. Put in foil pan with about an inch of beef broth, cover with foil and cook at 300 for another 2-3 hours or until 200 internal temp. Pull and rest for an hour.

Beef ribs are way easier. I started to do my brisket on the pit till I got the bark I wanted, then put them in the oven on 275 till they probe tender. Then rest in a cooler for at least 2 hrs.

If you have ever been to Fogo de Chao and had their beef ribs...this is it. Don't even need a rotisserie. It was amazing and tasted exactly like theirs. Prime 1 Dino ribs from HEB.

I want to cook some like this but I want a bark like brisket, otherwise itís a waste to me.

Bark is the best part of a brisket IMO.

Donít wrap and add two hours to the cook. Spritz with beef broth every hour

Are these the same as what the butcher called "plate" ribs? I bought some plate ribs in the past and smoked them and they were great and easy to smoke.

After reading this post I had to try these. Turned out great even on a pellet grill cooked for 8 hours total.

The ribs come from the Short Plate section of a cowís rib cage closer to the belly than the spine and theyíre typically found cut into smaller portions and sold as beef short ribs.

update on the dinos. smoked 2 racks today. came out great! and was very e-z to do. everyone like them. thanks txmedic. for the headsup on the dinos ribs.
