    Not your Mama's meatloaf!

    Ok here goes! I made this twice so far, gained 10lbs and doubled the number of future bypasses I will need.......

    First get a pan foil it and then lay out your bacon.

    Mix together 1lbs ground beef, 1lbs Whataburger breakfast sausage, 1lbs Italian sausage. Chop 1 onion, 1 pack of mushrooms.

    Take half of the meat place it on the bacon and make a "boat"

    I FORGOT THIS PIC! Fill the inside with cheese and jalapeƱos I used a combination of cheddar and mozzarella. Then cover with the other half of meat.

    Wrap the bacon around it then place bacon ends side down on a rack. The rack is important because if you do it on a pan or a casserole dish it with be in a grease bath.

    I put on the gas grill with a pan to catch the drippings and added some wood chips to the smoking box.

    After about 30-45 minutes I started to baste it in Franks Red Hot sweet chili

    I cooked it till internal temp of 160, about an hour and thirty minutes on 300-325 degree grill and I let it rest for 10 minutes

            I've always called those Fatties and usually smoke them. They are dang good for sure.

            Here is a breakfast one that my crew loves.

            Some finely diced vidailia onion
            2 eggs beaten and add a bit of milk or cream to even it all out

            Saute the onion in a bit of olive oil over medium heat and pour the eggs over the onion that is evenly distributed over bottom of small skillet and cook just long enough to almost set the eggs. They should be just a bit runny. Don't mess with it with a spatula, just let it set. The residual heat will finish the cooking.

            1 grill roasted red pepper peeled and seeded
            1 grill roasted pablano pepper peeled and seeded (optional)
            3 or 4 slices of deli ham sliced sandwich thickness
            Some kind of cheese in the middle
            breakfast sausage
            bacon

            Lay a sheet of plastic wrap on your cutting board. Lay out bacon and roll your sausage out into a rectangle. Slide eggs out of skillet onto the sausage. Next layer is the ham. Then the roasted red pepper, then the pablano pepper, then the cheese. Use a solid type cheese, not shredded. It makes it easier to roll.

            Cook till 160 internal and rest for 10 minutes

                    One of the best-looking meatloaf that I have seen. It looks good, but before that, I will surely need to set-up these cardinal gates so that my Huskies will stay out of the kitchen.

                        You need to check out the bacon weave!
                        It looks cool, but I think I like your bacon layout better. With the bacon weave, not all the bacon gets crisp.

                        We call these fatties as well.
