cut it off to "bleed" gets rid of most of the blood line resulting in a cleaner meat. It is also known as Ling, lemonfish, but cobia is its proper name.

Never heard of that, but it sounds logical. I remember catching 2 big ling with my uncle when he ran a charter service out of Port Isabel. One weight 55 lbs and the other was 75 lbs ... even the big ones are great eatin'.
