    First time to make an elk roast. It’s better than I expected. I’m glad I have several more cuts of roast.

    Just a classic roast recipe, however I did a few things my way.
    Seared on all sides. Added chopped onion, garlic, and tomato paste and coated roast and removed. Deglazed pan with Redwine, balsamic vinegar and Worcestershire, getting all grits off the bottom.

    10hrs.

    Then used the roast stock to make a gravy by mixing a bit of corn starch to thicken.

    Man, I am not a pot roast fan, probably because I had way too many growing up, but wow that looks good!

    How well did the meat absorb the seasoning?

      I think the meat is very flavorful by itself without the stock or the gravy. I’d put it on a sandwich!

          Cooked in a crock pot ? Regardless, it looks very good ! I only had elk roast once, in a hunting camp. The cook was a professional hunting camp, cow camp, and mining camp cook, and he knew his trade. It was delicious !

                You all sound surprised it was good.
                Elk meat is great any way it is cooked.

                Looks like you left the flat iron in that roast, too bad as that steak is great on elk.

                Roast looks great by the way, I don't put tomato paste in mine but may try it now.

                  I love elk meat. It reminds me of grass fed beef. I miss hunting them. I’ve been a couple times but it’s hard to find people that want to go.

                    It was delicious, best I’ve ever made.

                    I had it processed, have tons and tons hind steaks and backstraps that are cut into 1” to 3/4” cutlets and they are fantastic. Quick to thaw and grill.

                    Been on elk burgers for lunch for a couple weeks now.

                    Elk pan sausage and eggs for breakfast. I think elk is now my favorite wild game. I may say that because I’m out of sambar finally, and Nilgai.

                    The tomato paste I used is some stuff my mother gave me. She raves about it. She said it’s a double concentrate, it comes in a tube. It’s called Amore Tomato Paste. Now I’m ready to make roast again

                      Oh I never said. That roast stock was so freaking tasty I could not stop my self from sipping spoonful after spoonful of it.

                      If I ever have extra roast stock I’m freezing it for a soup on a rainy day like today.
