    So, what kind of meat did I just eat?

    Buddy of mine did a Nilgai hunt on one of the King Ranch leases in S Texas. Don’t kill one, they just shot hogs, but they sent him back with some meat, and he shared some of it.

    Pack of ground from Hibler, label says “Venison, Nilgai, Hog, Exotic”, nothing was circled. Color was about like ground beef, not dark like Elk and Nilgai, smell was closer to elk, a little gamely but not bad.

    Made some burgers, and was surprised that the taste was closer to lamb/mutton. Very distinct cervid flavor, not bad, but stands out. Do they have Aoudad down that way they might have thrown in there? Mouflon? Not really sure what else it might be.

    Don’t imagine it was anything too strange as it’s not worth the time and money to do it, not sure they mind killing stuff and leaving it lay down there.

    I’ve had plenty of venison, elk, Nilgai, and wild hogs. Never tried axis but from the way people talk about it don’t think it was this.

    Once something is ground there isn’t a person on this planet that can determine the difference between one cervid to the next. Steaks on the other hand it can be done with a little bit of accuracy depending what it is. Blind taste test, its about as good as guessing what ground is what.

        Yeah, was hoping somebody had an idea of what was around down there and likely to be turned into meat.

        I’ve never taken a deer to a processor, but I’ll accept meat gifts from friends.

            That may be true, but the Nilgai meat I’ve had before was very dark like an elk, and tasted about the same. It’s possible that was from a cow though and this was from a rutting bull or something.

              I have seen Nilgai, water buck, impala, scimitar. And even a kudu cow down there.

                  Ground meat may have had pork or beef fat added and changed the color from your basic Nilgai steak color??
