    My take on "Pig Candy"

    The butcher/processor that does our hogs has been leaving the bacon ends in pretty large chunks instead of the usual small slices. We have alot of it because we get about 20 hogs a year butchered. Having purchased an NSF Approved cooker this summer we decided to try selling it at the Farmer's Market where my wife sells her frozen cuts of meat. A modified "Pig Candy" is what we came up with. It's real simple. I cook the bacon on my charcoal fired flat top, put it in a boat, give it a healthy dose of maple syrup (local) and top it off with powdered sugar. It's too sweet for me but it has been a great seller even with the low attendance at the market this time of year. My best compliment was "There's alot of piggy goodness in there!"
