    GS Chefs HELP

I know there are a lot of great cooks here maybe even borderline chefs.
For years all I’ve used for frying shrimp fish and oysters has been peanut oil. But I’m wondering if there’s something better.

    olive oil................
Not "extra" virgin..... cause, it is from the first pressing..........
And may add an olive taste to some foods..........

Nope. Peanut oil is best! But I use regular ol vegetable oil to fry almost everything in. Unless I plan to use the oil more than once I won’t waste money on peanut oil.

        Tbis^^^™^™™

Fresh oil is the most important thing in my book. Peanut is my first choice.

I use canola oil or a canola/vegetable blend.

I’m not a chef but I operate the same as above.

High smoke point and neutral flavor is the goal. If you wanted to spend money on oil, grape seed or avocado oils are in this realm but expensive. It is hard to beat canola or peanut oils for your needs though.

We recently quit using peanut oil at the restaurants because of food allergies and cost, we are using a canola / vegetable blend now i believe, cannot tell the difference in taste, not sure on the longevity of the oil yet.
