Pine clear coat

Building a 24x24, 2 bed 1 bath cabin with loft for my parents to stay in when they come to visit the grandkids. All walls and ceilings are pine t&g. I plan on spraying clear this weekend. I thought that i wanted to use helmans spar urethane waterbased. I want something tbat wont yellow like standard poly. I have approx 2500 sq. Ft. Of surface to cover. Any suggestions? The helmans is going to cost a fortune.

I used minwax polycrylic. Easy cleanup and water based. Very expensive but I used it specifically to keep the wood from yellowing.
