    Need quail recipes

    I need a good quail recipe for about twenty birds i am wanting to cook. Willing to try anything

    I breast mine out, place a slice of jalapeno w/ cream cheese and wrap with bacon, then grill.

      I shish kabob the little suckers. Makes it easier to flip em on the grill.

      Prep: Lemon pepper, italian dressing

      Wrap with Bacon, bell peppers, and onion, on Shishkabob like this:
      Bacon-onion-Quail-bell pepper-bacon-onion-quail-bell pepper etc.

      Cook over smoking mesquite coals.

      Man I should have done some quail hunting this year. That Sounds GOOOD!

      As a second thought just give them to me. I will take care of that for you!

        Roasted Quail Almondine with Honey Glaze

        figure 2 - 3 quail per person / serving

        split quail in halves as you will marinate first, then bake in oven


        Marinade :

        - 1/2 cup fresh orange juice
        - 1/4 cup light soy sauce
        - 1 tsp minced garlic

        mix above ingredients and marinate quail halves in refrigerator for 6-8 hrs (can do longer if wish)

        then remove quail and set aside, discard marinade


        Ingredients

        quail
        Salt and pepper to taste
        4 tablespoons extra virgin olive oil
        1/4 cup sliced almonds

        basting sauce
        1/4 cup freshly squeezed orange juice
        3 tablespoons honey
        1 teaspoon minced garlic
        1 tablespoon ground cumin

        Method

        - Preheat oven to 450 degrees. Rub the quail with the olive oil, then sprinkle all over with salt and pepper or favorite seasoning.
        - Put them breast side up in a roasting pan just large enough to accommodate.
        - use spoon to baste quail with half basting mixture; place in oven.
        - after about 10 minutes of roasting, baste with remaining mixture ..... sprinkle almonds on top quail , then continue to roast until done, about 10 minutes more.

        Serve birds hot with pan juices

          He's got it right. Soak in the Italian dressing over night. Add a few Jalapenos in place of some bell pepper and spice it up. Add a wedge of pineapple for a sweeter taste. Just don't overcook it. Microwave the bacon first. If you grill until bacon is done without microwaving, quail will be dry. Filet the breast and it will cook better.
