    Deer Ribs

A friend of mine shot a doe last weekend at my ranch and I need a recipe to cook them. And do I need to cut them down or cook whole?

I cook whole, just cook slow and yummy!

When I cut them I go everyother one so there is good meat on each rib.

Never saw a deer with enough meat to hassle with on the ribs. Post some pics if you can.

Marinate overnight in Coca-Cola & grill over charcoal. You'll never throw them away again....trust me.

I remember eating deer ribs as a kid in Illinois (I got here as soon as I could) but I had also goten into the bad habit of thinking there was not enough meat to mess with. I cut them into pieces of 3-5 ribs and boil in seasoned water. Throw them on the smoker for a couple of hours, then slow cook overnight in one of those electric countertop cookers. Best to do on a Saturday so your ready to go right after Church on Sunday! Works great for wild hog also, but if its a boar you need to add an extra step. Soak overnight in vinigar, red wine and apple cider are the best, all will work. Then do the boil, smoke, and counter top cooker. Guaranteed to fall off the boan. I just recently learned the vinigar marinate for the boar hog. I have never been able to cook or eat boar in the past because of the smell. I had given up trying to cook boar meat and I would always give that meat away. Anyway one of the guys that I gave some boar meat to last year has a friend thats a chef. This is his recomendation to soak in vinigar, works great for ham steaks and chops on the grill also......

Cut into 2-3 inch strips across the bone. Then boil 30 minutes, roll in seasoned flour, then deep fry. Or use in a stew. Both very good.

That is what I thought. Doe ribs seem like they have about 4oz. of meat on them and that is the entire sheet of ribs. I hate to work for a quarter of a pound of meat.

Boil for about 30 min put in slow cooker for about 4 hrs with bbq sauce pull out the bones and you will have plenty to make BBQ Sandwiches with.

If you were to listen to a professional outdoor writer and deer processor from Ozona, you would never eat them again. He wrote in one of his last articles that the ribs are the carriers of lots and lots of harmful bacteria if the deer is processed in the field. The ribs hold in all of the intestines and even under plant processing, they are not good to eat becaue of this. So my question back to him was in 2 words, "Wanton Waste". If you were to have gotten stopped by a GW with your qtred up deer and did not have the ribs, he would simply tell you to sign here. He is also the same writer that stated that young spikes will always grow a good set of horns every other yr after their first and oddballs in the off yr. Can you say Moron?

There is no requirement to keep the ribs. No citation to issue.
