    Cajun Chicken and Rice

    Hey guys, haven't ever posted in here before, but its cold, school got cancelled so I'm bored and at home.

    This is Cajun Chicken and Rice. May add dumplings later if i feel like it.

    Needed
    Cast iron Dutch oven or magnalite.
    4lbs chicken thighs.
    2 yellow onions
    1 celery stock
    1 can chicken broth
    Seasoning
    Olive oil

    First chop and then cook onions and celery with some oil. Then remove them from the pot.

    Chop up chicken and put in the pot.
    Add some oil, some white sugar, and some seasoning. I prefer holliers.

    When chicken is about cooked, add the vegetables back in.

    Add chicken broth, bring to a boil, drop to low heat, and then cover and leave for about an hour.

      If you would like to turn it into chicken and dumplings add one more can of broth.

      When the chicken is completely cooked take out a cup of broth, mix with about a cup of seasoned flour , knead, and flatten, and cut dumplings. Set the dumplings on top of the stew, cover, and simmer 15 minutes, serve over rice.

      If you can't cook rice, put rice in a big pot, fill with water until its knuckle deep over thr rice. Then bring to a boil, cover, go to low heat, roll it every 5 or so minutes until its done.

              Looks good. But you say Cajun, and it's missing 1/3 of the holy trinity? Not a fan of bell peppers?

                No Bell peppers in the chicken and rice. Ive done it both ways.

                Now when i make my normal chicken and dumplings it starts with trinity, you also fry the chicken first[emoji41]

                      We add some sliced link sausage and some roux. Made it tonight, we call it rice and gravy in Louisiana.

                        This is just chicken and rice, little lighter dish. Called it Cajun so the Yankees would understand where it came from. Probably the only recipe i make in the cast iron without a roux.
