Gday guys,
I wanted to cook an on the bone shoulder roast off a half grown red deer I shot revently. Trouble is finding a decent recipe on the internet. Anyone care to share one please? ![]() Sent from my SM-G930F using Tapatalk |

this is how I'd do it ..
- stuff roast with lots of garlic cloves - rub olive oil on roast, generously sprinkle with kosher salt & fresh ground black pepper - wrap in Saran (plastic) wrap and refrigerate over night in a large baking pan, add a few Tblspns of olive oil and brown meat real good on all sides - add chopped celery, carrots, onions, mushrooms, 2 Bay leaves, 2 large russet potatoes diced in 2" squares, and several sprigs of thyme - add 1 beer or 12 ozs of red wine - add 1 cup of beef broth ... you want to fill pan with 1" of liquid so roast will braise - top roast with 3-4 slices of bacon cover tightly with lid or heavy duty foil bake at 275 for 6 hours every 1-2 hrs check pan to add liquid if needed (do not let water level get below 1/2") spoon liquid juices on meat to keep moist, cover tightly, and keep cooking should resemble this ![]() |

Its kind of cheating..... but I take the roast and put it in a crock pot or roasting pan and take about 6 cans of "cream of whatever" soups and just pour them over the roast. Make sure to get a variety of flavors of "cream of" soups. Add carrots and new potatoes in time for them to be done. According to the size of the roast....temps and times will be similar as mentioned above.

I've been doing "Mississippi Roast"
It's a packet of ranch mix, onion soup mix (or an au jus mix), some butter, and a hand full of pepperoncini peppers. Super good. Look up an exact recipe online |

Here's a Portuguese recipe for venison shanks braised in wine.
Google honest-food dot net "rainy-days-and-braised-shanks". No reason why it wouldn't work with a bone-in shoulder. It'd probably work in a slow cooker if you browned it properly and deglazed the frying pan into the slow cooker. Even better in a Dutch oven. Bon apetit! Sent from my iPad using Tapatalk |
