Default Team Wang Thang-Chicken Wings

Post up if you would like to be a part of chicken wings!

This has been a team that has been missing for a couple of years and now it is back!

I have a large (2' x 5') adjustable grill, assorted pop-ups and other stuff.

Let's get it started!

We will get a detailed list of things to bring soon.

In the meantime we need ideas for various types of wings. Tilladaddy and I (his recipe) have one style that is very flavorful but not hot. These are cooked on a grill.

Other than regular wing places, I am not familiar with making any other style so if you have a good recipe or style bring it on!

Well I guess we can do them several different ways. I cook mine on a grill, over mesquite coals, in this case!

If you need BBQ sauce my wife makes the worlds best homemade BBQ sauce.

I have had it over there at Team RIB for the past 2 years and would like to bring a 1/2 gallon of spicy and a 1/2 gallon of regular for the Wang Thang-Chicken Wings

Personally I like wingettes but full size wings mean there is half the flipping involved!

If you are frying then I suppose wingettes are just as easy and maybe easier to deal with.

See what you can come up with.

I thought I had a good source for this last year as my brother in law managed a chicken factory place in Minden. He passed away about 6 months back and I am not sure if I can still make that happen. I will ask my SIL if she still has any contact with anyone there at the plant.

Either way is cool. But wingettes last longer and are much easier to cook and keep available. I'll see what I can come up woth

We can copy the shirt design with some sort of signage and dip it in a flame pattern, or pretty much anything that can be thought up!!

Well, I am going to get Larry to make up a banner that will be about 2' x 10' using the theme that is being built on for the t-shirts.

It will be a generic sign that has no dates on it so it can be passed down from year to year for future bownanzas.

Are you talking about dipping using the thingamajig-er you recently acquired?

I've got a two burner fryer I'm planning on bringing. Should be able to fry 24-36 at a time.

Are u familiar with Cajun fryers? They've got a pretty good design that I'm sure u could duplicate.

Good question?

Probably need to figure out how many different flavors or types of wings we plan on making.

Once we get the number of troops finalized we can split the wing expense up accordingly. Hopefully we can find a reasonably priced source for a bulk buy on wingettes.

Some are gonna eat a dozen some 1 or 2 and most somewhere in between.

I would guess maybe 3-500 wings? Maybe more?

I have a source for wings: Tracey at Syracuse has stepped up and offered to get us wholesale wings or wingettes.

There are 160 whole wings (they are reportedly larger than your average store bought variety) to a 20# box. I suppose there are 320 wingettes in a box.

They will come frozen and we will get them a couple weeks before Nanza.

He is working on a price.

Just need to decide how many we want.

Thanks Todd, Do we have T-shirt design yet? In another life I was a Digital Media Specialist (graphic designer) for 20 years and still have skills and contacts. I'll PM you my number to talk about the shirts. Also one of by friends owns the Wing Stop here in town he suggests since most people are only winging for appetizers the number he comes up with is 175lbs to feed 700 people a 1/4 of a pound of wings per person. About 5 to 6 wings per person. Do we have an average attendance count for the past 3 years we can look at?

Most events I have cooked wings at we ran 4 pots of sauce.
1. Hot Buffalo
5 pounds chicken wings, tips removed
1 cup hot sauce (i.e. Tabasco)
1/2 cup honey
1/4 cup butter, melted
1/4 cup lime juice
2 tablespoon plus 1 teaspoon salt
2. Honey BBQ
2 1/2 tablespoons ground black pepper
1 tablespoon onion powder
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon seasoned salt
5 pounds chicken wings, rinsed and dried
1 cup honey
1/2 cup hot barbecue sauce (or more to taste; use your favorite and the hottest sauce you can stand)
3 tablespoons apple juice
3. Grilled Thai Wings
4-5 pounds chicken wings
1/4 cup oyster sauce
1/4 cup dry red wine
1/4 cup honey
4-5 green onions, finely chopped
4 cloves garlic minced
2 tablespoons chili sauce
2 tablespoons fresh cilantro, chopped
1 tablespoon lemon juice
4. Garlic Parmesan Chicken Wings
1/2 cup butter, melted
1 teaspoon garlic powder
1/2 teaspoon onion salt
1/4 teaspoon black pepper, freshly ground
1/2 cup parmesan cheese, grated
24 chicken wings, fried

2 cooks on grills
2 cooks on fryers
2 Cooks on sauces

4 aluminum pans on the table 2 pans per recipe. Rotating 8 pans.
Sauce cooks can serve or our wives and girlfriends.

This is gonna be great!

There has not been a wing team at Nanza for a while, at least since I started going a few years ago so this is a new team as far as I can tell. As far as numbers there are over 1000 people that attend maybe 3 times that amount, I am not sure to exact. We will probably just settle on a number and if we run out then so be it. There is always plenty of food to go around. No one leaves hungry by choice. It will give us something to plan for next year.

As far as shirts there is another thread that has a title about Banner ideas but it is for a banner as well as shirts. If you have any thoughts or input then by all means bring them to the table. No commitments have been made to have shirts made or the banner printed.

At this point we are gathering ideas and team members. The hardcore planning will get finalized in a few more weeks but it is never too late to start.
