I have a buddy who is a chef at HEB Plus who is good for recipe or two. Tried it tonight pretty good:
4 boneless ,skinless chicken breast
4 tablespoons Adams reserve sear n crust rub( season how you like)
4 teaspoons salt (I salted to taste)
2 cups tortilla chips,crushed
3 table spoons olive oil
Cookwell and company Queso con chiles verde(any queso will work,but this one tasted like the boom boom sauce at chuy's)
1. Place chicken breasts in between 2 layers of plastic wrap; pound with a meat mallet to a uniform 1/2-inch thickness. Season chicken with rub and salt.
2. Crush tortilla chips in a large bowl. Press chips onto chicken and set aside.
3. Heat oil in a large skillet over Medium-High heat. Saute chicken in a skillet about 5 minutes per side or until done and juices are clear.
4. Heat queso in microwave and pour desired amount over chicken.
