    Pulled Pork Tacos

    Did this on Saturday for a few friends:

    7lb. Boston Butt or Pork Shoulder (trim excess fat)
    Large bottle of Pace Medium Chunky Salsa
    1 cup water
    2 TBS of Unsweetened Cocoa powder
    2 TBS Dried Oregano
    2 TBS of Kosher Salt
    2 TBS of Chili Powder
    2 TBS of Garlic Powder
    2 TBS of Seasoned Pepper

    Mix dry stuff together and then add to Salsa and mix together.

    Put pork and salsa mix (add a cup of water) in crock pot and cook on low for 10 hours. Turn the butt/shoudler once or twice.

    When done, remove from pork from crock pot and shred it. It will basically fall apart.

    Sauce-take the left over sauce from the crock pot and put it in a sauce pan and simmer. Add some flour to thicken up a little and serve with chips or put on your tacos. It is basically rendered down salsa with the pork juices, kind of like a mole. It's awesome!

    Tortillas-I swear by the flour tortillas from Central Market. Stack a bunch and wrap in foil and put in 350 degres oven for 10 minutes.

    Serve with Sour cream, cheese, whatever else you want.

    PS-I have also done this with a 2.5 lb butt or shoulder, just decrease the ingredients by half and cut time down to 6-8 hours.

        Think this would turn out just as good with a wild sow hindquarter i have in the freezer.. to large. she was about 85 on the hoof?
