    Flounder Pontchartrain

    Stuffed one large flounder with shrimp and the Cajun trinity. Grilled and covered in Pontchartain sauce with fried taters and grilled zucchini.

          Thanks Blake, it was my first time making the sauce and it was great. I might use a touch of flour to form a light roux before adding the cream next time.

          Yeah the fins were really good and that sauce is RICH....

          My rear end will be speaking in Tongue's tomorrow. My co-workers will not be happy to hear this.

                  I've laid off from our favorite foods lately. I could binge for days!!!

                  She grew up here CB, her Mother and family are from Slidell and the North Shore.

                    Here's a link to Blake's recipe. I made it really close to this but forgot to garnish with the green onion tips when served.

                    The stuffing was diced shrimp, green onion and garlic sauteed in olive oil and seasoned to taste.
