Default Smoked Rainbow Trout

We caught some trout Easter weekend at Beavers Bend and decided then I was going to smoke them. Now finally getting around to it.
Brined the trout for 12 to 14hrs in a mixture of brown sugar, salt, a little garlic powder, onion powder, lemon pepper. and cold water. Got the out of the brine this morning and am letting them dry before they go on the smoker.
Going to use pecan and a little mesquite I think. Going to try and keep the smoker at 200-220 for 3 hrs.

Mix some with mayonase and mustard, chives and some rajun blaze. And spread on ritz crackers. Oh and of course a beer.

End results, We (BRRDNK) made lettuce wraps with trout, mayo, green onion, Barnacle Dust and goat cheese. Also, some spread on crisps with trout, mayo, cream cheese, green onion, Barnacle Dust, and fresh squeezed lemon juice

I plan on fishing there this week. What area did you fish?

I have never been and I am excited to catch some trout.
