Default My Wild Kitchen - New Post - Venison Fajita Roll Ups

Who still has backstrap in the freezer? If your stash is all gone, steal some from a friend. I loved everything about this meal.

Marinated butterflied backstrap stuffed with fresh pico de gallo and queso fresco and baked. It was everything I hoped it'd be.

You could probably try grilling it, too, but you might want to wrap it in foil first to keep the juices from escaping.

These were even good cold. I missed supper and didn't get them hot off the grill.
