how do you do it and what does it do for the photo and what software do you have to have in order to do it?

It really depends. Sometimes you use it for a huge panorama, sometimes you use it when your depth of field is super narrow so you stack the focused parts on top of each other for a longer focus depth. In astronomy you can use it to take longer exposures (many short exposures added together) because the sky moves faster than it takes you to expose everything. Lots of programs, lots of uses.
