    LEM Summer sausage storage?

    I made 20 pounds of summer sausage this weekend using the LEM kit. Trying to decide whether to freeze or just refrigerate. Anybody have experience with how long the stuff stays good refrigerated?

    seal and freeze.

      It’ll stay good for awhile in the fridge. But way easier just to deal and freeze with that amount.

        It will keep for months in the fridge. I recommend you vac seal it or at least saran rap it. The casing is permeable and the meat will dry out, even in the freezer. I speak from experience.

          I would freeze what you're not gonna eat in the next week or so. I take one out of the freezer and put it in the fridge for two days then it's ready to eat.
