Made this recipe up after a deepsea fishing run. Not Half bad, and relatively simple. Good on any type of fish.
1. Coat 10 to 15 boneless filets with Favorite Cajun rub and put them in a large bowl with 1 container of Italian Dressing, 1/2 bottel of your favorite cajun hot sauce, and 1/2 cup of lemon juice. Cover and Marinate for 3-4 hours. Cover bottom of pan with olive oil and 1/4 stick of melted butter. Sautee fish for 4-5 minutes on each side over medium heat or until firm and flaky.
Don't marinate fish too long because lemon juice will cook it!
