Another couple requests....and very simple.
Ingredients:
-Large sweet onion (or two)
-Bacon (I like the cheaper thin bacon because it wraps up and crisps easier)
-Rub/Dust of choice. (I prefer a sweeter dust on onion rings, the wife likes a more savory one)
-Toothpicks
-Aluminum foil or pan
Directions:
Slice onion into 1/2 inch wide rings and separate. I like two rings per to get a more heartier onion taste per bite and an easier wrap. Some folks prefer just one.
Lightly dust the rings top side (Optional if you like less seasoning and salt)
Wrap each ring group with bacon and toothpick into place. I end up using two slices of bacon per ring set for full coverage.
Lightly dust the outside on both sides. The bacon will have salt in it so do not over-dust as they can be too salty for some if overseasoned.
Smoke on a sheet of aluminum foil or in a pan at 250 degrees for 90 minutes with a lighter wood like pecan, oak or fruit wood and pull... let cool for a few minutes.
Makes great appetizers early in a cook or a side dish for a BBQ meal by throwing them on at the end. Enjoy!
