    High melt cheese for Summer sausage

    It is time to smoke more summer sausage around my house. I usually use queso fresco in mine, but was curious what high melt cheese others prefer. I have to admit, I would prefer to be able to run to the store and grab something versus having to order online..... But if it is worth the trouble I could be persuaded. What do you say GS?

    I use the high temp cheese from sausagemaker.com and have no complaints. I think its free shipping over $50.00.

          Last one I did, I just used sargento cheddar sticks that I got at Kroger. Not high melt, cheap and it turned out great.

            Sometimes you can find a processor in your area that will sell you high melt cheese over the counter. You can call and ask

              Local meat market will sell it to you by the pound as well, its where I get mine from.

                    Regular sharp cheddar here (not high temp).... cook till 153 internal in 180 oven and ice bath came out exceptional. If you're careful high melt is not required.
