I was in Sugarland this past week and ate at a place called Rouxpour's. They had Boudin and cream cheese stuffed Jalapenos and were very good. So had the smoker going today and thought I would try to make them.
You need Plilly cream cheese, peppers, bacon, and boudin.
I put the boudin on the smoker for about 30 min to get a little smoke on it and also to be warm to help mix the cream cheese with it. Next cut the ends off the peppers and split and deseeded them. Mixed the boudin and and cream cheese together and stuffed in the peppers. Wrapped in bacon and a little saltlick seasoning on top. Smoked for about an hour and a half. Came out great.
You could also do these on the grill just watch for flare ups with the bacon.
